This garlic soup recipe combines velvety roasted garlic soup with potatoes, onions, celery and cream, topped with crunchy croutons. The soup is rich, comforting, and loaded with mellow garlic flavour. It is ideal for chilly nights when you need something hearty and soothing.
Preheat the oven to 200°C. Cut the tops off the garlic bulbs to expose the cloves. Place them on a baking tray, drizzle with 15 mL olive oil, and sprinkle with salt. Wrap loosely in foil and roast for 40-45 minutes until soft and golden. Let cool slightly.

Sauté the Aromatics
In a large pot, melt the butter over medium heat. Add the diced onion and chopped celery. Sauté for 8-10 minutes until the onion is translucent and soft but not browned.

Add Potatoes and Stock
Add the peeled and diced potatoes to the pot. Pour in the vegetable stock and stir well. Bring the mixture to a boil over high heat.

Simmer the Soup
Once boiling, reduce the heat to low and let the soup simmer for about 20 minutes until the potatoes are very tender when pierced with a fork.

Squeeze the soft, roasted garlic cloves out of their skins directly into the soup pot. Discard the papery skins.

Remove the pot from heat. Using an immersion blender, purée the soup until it's smooth and creamy. If you don't have an immersion blender, let the soup cool slightly, then carefully purée it in batches in a regular blender or food processor.

Add Cream and Seasonings
Stir the single cream into the puréed soup until fully incorporated. Add the chopped fresh thyme, salt and pepper to taste. If the soup is too thick, thin it out with a little more vegetable stock.

Prepare Croutons
While the soup simmers, make the croutons. Preheat the oven to 180°C. Cut the baguette into 1 cm cubes. Toss with remaining 15 mL olive oil, salt and pepper. Spread on a baking sheet and bake for 8-10 minutes until crisp and golden.
