How The Cup Of Filter Coffee Stands Out?
Filter coffee or filter kaapi is the second-best coffee in the world. It hails from South India, where it is generally served for breakfast and evening snacks. A filter coffee recipe uses freshly ground coffee beans brewed in a classic steel filter. However, making this filter coffee is a skill and requires patience and practice. If you are a beginner coffee maker, then follow these steps for a perfect cup of filter coffee.
Pick The Right Roast
Start by choosing the right coffee beans for your filter coffee. Always opt for freshly roasted, high-quality ground blends of Arabica and Robusta in a 70:30 ratio to achieve the signature essence of your filter coffee recipe. The choices you make for the beans impact the overall richness, flavour and aroma of your brew. Do not just pick the coffee powder labelled as filter, as it may result in a flat taste in your coffee.
Prepare The Filter
Authentic filter coffee is made in a piece of equipment, usually constructed of brass or stainless steel, that is commonly found in South Indian households. This equipment comprises four essential components: a lid, an umbrella, an upper container and a lower container. Add filter coffee powder to the upper container (perforated chamber) and press it lightly with the umbrella (pressing disc). Make sure not to press it too hard so the water drips smoothly.
Brew The Decoction
A perfect decoction takes much time. To start this process, slowly pour boiling water into the filter and cover with the lid. Let it sit for around 12-15 minutes. A decoction with perfect consistency will collect in the lower container (chamber). Patience is very important during this process, as slow drip brewing brings out natural oils and aromas, making it very calming and ritualistic. Additionally, the ideal proportion for the filter coffee recipe is 1:15 coffee to water, so make it accordingly to achieve a balanced combination.
Boil The Milk
In a filter coffee recipe, heated milk must be added to the coffee decoction. So, boil the fresh full-fat milk until slightly frothy. This frothy milk perfectly balances the strong decoction. If you see a layer of cream has formed on top, you can strain the milk before using it, if you wish. For a vegan version, you can use almond or soy milk, but heat them until hot and avoid boiling them, as they may curdle or split.
Mix The Coffee
In South Indian households, there is a specific tumbler-davara set that is used for drinking filter coffee. Pour the coffee decoction into the tumbler. Then add hot milk and sugar to taste. The filter coffee recipe caters to different tastes; some like strong coffee, and some like it light. So adjust the decoction-to-milk ratio depending on how strong or light you like the coffee. For an authentic touch, pour the coffee back and forth between the tumbler and the davara. This aerates the coffee, improves the aroma and creates the signature foamy layer on top.
What To Pair With The Filter Coffee?
For almost every South Indian family, a tumbler of piping hot filter coffee is non-negotiable; they often enjoy it with regional breakfast dishes like upma, idli, medu vada and dosa. Also, with a variety of snacks like onion uthappam, murukku and sundal. This beverage is known by different names in different regions, such as meter coffee and Madras filter coffee, but the basic brewing method remains similar. Every sip of hot filter coffee combines comfort, strength and culture.
Tips To Get A Perfect Brew Every Time
When prepping up for your coffee, always buy fresh filter coffee powder from trusted roasters. Also, use the coffee decoction within 30 minutes, as the old decoction turns bitter. Avoid overpacking the filter with too much coffee powder. Your coffee should have enough space to swell and drip properly. Do not dilute the decoction excessively and avoid skipping the frothing step, because it adds aroma and texture to your filter coffee.
