Description - Step 1
Roast the besan
Heat a heavy-bottomed pan on a low flame. Add ghee and once it melts, stir in the besan. Roast patiently until the flour turns golden brown and releases a nutty fragrance. Stir continuously to avoid burning.

Add sweetness & flavour
Switch off the flame and allow the mixture to cool slightly. Add powdered sugar and cardamom powder, mixing well with a spatula. When warm enough to touch, knead lightly with your hands until everything is blended.

Shape and fill
Take small portions of the warm mixture and flatten them slightly on your palm. Place a small dollop of peanut butter in the centre. Gently roll it into a smooth ball to seal the filling inside. Repeat the same process for the remaining mixture. Garnish with chopped pistachios on top of each ball.

Rest or chill
Let the energy balls rest at room temperature for 10 to 15 minutes to firm up. For firmer balls, refrigerate them for 15 minutes before serving.

Store in an airtight container at room temperature for up to 5 to 6 days if kept in a cool and dry spot. It will stay good for up to 10 to 12 days if kept in the refrigerator.
