A History of India’s Relationship with the Chakki
The chakki goes back to villages several millennia ago, around 7000-8000 years back to the Indus Valley Civilisation, if archaeological evidence is to be seen. There was no electricity back then, and plenty of grains needed to be crushed to make them easier to consume. So, this stone grinding method of grains goes back to such advanced civilisations.
Some 5000 years ago, the chakki was seen being used in India, with the word ‘chakki’ coming from the Sanskrit ‘chakra’, meaning wheel, which points to two circular stones, one fixed and one rotating, that grind grain between them. In most households, this was a shared work that was taken up by the women, often involving a community. Women took the grains to a household chakki or to a village mill run by a miller family, known locally as a chakkiwala or pisewala, grinding fresh flour every few days.
This custom prevailed for some centuries until the British came and started overhauling things. They introduced roller mills in the 19th century, and then came the Green Revolution of the 1960s-70s, which scaled up high-yield wheat farming and, alongside it, industrial milling capable of processing far more flour than any village chakki. How Stone Grinding Actually Works
The process is simple, mechanically, which is part of why this stone-grinding method survived unchanged for so long. The whole wheat grains are fed into the centre hole of the top stone, and as it rotates against the fixed stone below, the kernel is crushed and pushed outward, and the flour falls off the edges. There's no separation of the bran, germ, and endosperm; all are ground and stay in the flour in their natural proportions, rather than being split apart and selectively recombined, as modern industrial roller mills, used for making flour, do.
Stone mills also run at low speed, and this is usually where the ‘healthier’ part of the chakki atta comes from, the idea being that slow grinding generates less heat. Low heat better protects nutrients like Vitamin E and certain B vitamins. What Makes Milling Khapli Wheat Flour Different

This extra dehusking step, done with a dedicated dehusking machine that most modern wheat never needs, is labour-intensive and one of the reasons why khapli wheat's yields lagged behind newer wheat varieties, and contributed to its decline in the early 2000s.
Once dehusked and cleaned, khapli goes through the same low-speed stone grinding as any other whole wheat, but its properties are different. Because khapli atta already has a different gluten structure and a denser, harder grain than modern hybrid wheat, millers typically stone-grind it fresh in small batches at controlled, low temperatures to preserve its structure and characteristic nutty flavour.
