What Is Fat-Washing?
As silly as the term sounds, fat-washing is a flavour-extraction method, not a cleaning process, despite the name. A fat, like butter, oil, or rendered animal fat, is mixed into a spirit long enough for the spirit to pull flavour and aroma compounds out of the fat. The mixture is then chilled until the fat solidifies, at which point it's skimmed off and strained away, leaving a clear, infused spirit.
Spirits are unusually good at this job because they can dissolve both water-soluble and fat-soluble compounds at once, something water alone can't manage. Distilled spirits already carry a dense, varied load of aroma molecules. One flavour-chemistry study identified 188 distinct compounds across just three commercial spirits, spanning esters, fatty acids, and aromatic phenols, which is part of why they're such effective carriers once fat is introduced into the mix.
Fat Carries Flavour That Water Can't
The short answer? Most aroma molecules are fat-soluble first and water-soluble second. Fat holds on to them longer and releases them more slowly, which is exactly why a bit of butter smells stronger and lingers longer than a spoon of sugar in any drink. Fat-washing takes advantage of this principle quite well. It's technically a form of liquid-liquid extraction governed by partition coefficients, i.e., how a flavour compound ‘chooses’ to sit in fat versus liquid. And the more surface area between the two, the more efficient the transfer.
That's why recipes call for vigorous mixing or shaking rather than a passive soak. A reference work frames the entire process quite simply, stating that fat-washing works because most fat-soluble aromatic compounds are also soluble in spirits, allowing the flavour to move from one carrier to the other without any trace of the fat's texture.
How To Fat-Wash At Home
The process of fat washing may involve only a handful of steps, but it still requires a bit of patience. The consensus on the ratio is roughly 4:3, with 120g of fat per 750ml of spirit, though this varies depending on the fat's intensity.
Combine warm fat with spirit: Melt the fat on low heat, then stir it into the spirit at room temperature. Never pour spirit into a pan over direct heat.
Rest and agitate: Let the mixture sit for 1 to 3 hours at room temperature, stirring or shaking occasionally to maximise contact between the fat and spirit.
Freeze: Move the container to the freezer for two to twenty-four hours, until the fat solidifies into a solid cap or scattered clumps.
Skim and strain: Lift off the solid fat, then pass the liquid through a fine strainer, cheesecloth, or coffee filter, as many times as needed, until it runs clear.
The shelf life of these extracted liquids depends entirely on the fat. Plant-based fats such as coconut or sesame oil carry natural antioxidants and hold their flavour for four to six weeks in a high-proof spirit, while animal fats like brown butter or bacon fat oxidise faster and are best used within ten to fourteen days before they go rancid.
The Origin of Fat Washing
Fat-washing's bar-world debut has a specific birthdate: 2007, at PDT (Please Don't Tell) in New York's East Village, where bartender Don Lee combined bourbon with rendered Benton's bacon fat to create the now-classic Benton's Old Fashioned. Lee didn't invent the underlying idea, although he adapted it from enfleurage, a centuries-old perfumery technique in which odourless fat is pressed against flowers to absorb their scent, then exposed to a solvent that extracts the fragrance from the fat into a usable form. That borrowed logic of using fat as a temporary flavour reservoir and solvent as the transfer agent is the same one every fat-washed spirit still runs on today.
Choosing Your Fat
Different fats behave differently once they're in a spirit, both in the flavour they contribute and in how they hold up over time. Cocoa butter, for instance, is roughly one-third each of palmitic, stearic, and oleic acids, a balance that gives it a melting point close to body temperature. This is partly why it releases flavour smoothly rather than sitting heavy. Making It Work in Non-Alcoholic Drinks

The result mimics the silky, fat-carried texture and flavour release of a true fat-washed spirit, achieved through stabilisation rather than freezing. Bar teams are increasingly running this in parallel with their fat-washed spirit programmes. Some have gone as far as fat-washing ingredients like whole cacao specifically to build out non-alcoholic drink menus alongside their mixed cocktail drink lists, rather than treating zero-proof as an afterthought.
Beyond The Bar and Drinks
Fat-washing's usefulness was never limited to mixed cocktail drinks, and it just arrived at the bar later than everywhere else. Perfumers were applying the fat-as-reservoir principle centuries before any bartender picked it up, using enfleurage to extract fragrance from flowers that couldn't withstand direct heat or solvent extraction.
