Over the years, the recipe has undergone several iterations, and the addition of corn, peppers, and other ingredients led to it being called “cowboy caviar”. Though it’s changed from the original, the salad remains a great side dish for any picnic, potluck, or party; it’s usually served with tortilla chips. The salad went viral a few years ago, not for its ingredients, but for what it represented and what it erased. While trying to claim the dish as a new lifestyle trend, influencers erased its roots as a Texan dish created to elevate black-eyed peas, a staple of Southern and Soul food.

Cowboy Caviar: Ingredients
Here’s what you need to make this corn salad recipe at home.
For the salad:
3 tomatoes, deseeded and diced
2 avocados diced
⅓ cup diced red onion
1 can of canned black beans, rinsed and drained
1 can of canned black-eyed peas, rinsed and drained
1½ cups corn kernels (cooked and cooled; thaw and blanch if using frozen)
1 bell pepper, diced
1 jalapeño, seeds removed, finely diced
⅓ cup chopped cilantro
Tortilla chips: for serving
For the dressing:
⅓ cup olive oil
2 tablespoons fresh lime juice
2 tablespoons red wine vinegar
1 teaspoon granulated sugar
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon garlic powder
Prep The Ingredients
The first step is to prep all the vegetables as listed in the recipe list. Try to dice them into similar-sized, bite-sized pieces so every spoonful has a balanced mix of flavours and textures. With the corn, prep it depending on the type you are using. If using frozen corn, thaw it and briefly boil (2–3 minutes) or blanch it, then drain well. However, if you have fresh produce from the season, boil or steam the kernels until just tender. And if you are using canned corn, simply drain and rinse it. No further cooking is needed.
Make The Salad Base
Once your ingredients are diced and ready, start assembling. Combine all the vegetables and cilantro in a large bowl. Give it a good toss to ensure the ingredients are combined. For the freshest texture, add the avocado only shortly before serving (even after adding the sauce from the next step). Avocado browns and softens if mixed too far in advance, so it's best added at the end. Now, get on to your sauce.
Add The Sauce
Add all the ingredients listed under the sauce into a separate bowl and whisk until smooth. Pour this dressing over the other ingredients and stir everything together. Make sure to toss it well so the dressing coats the ingredients. Cover the bowl and refrigerate for at least 30 minutes before serving so the flavours have time to meld. If making it ahead, gently toss the salad again just before serving.
