The chickpeas are simmered in a rich tomato-based masala, layered with par-cooked rice, and then steam-cooked together until the flavours meld. 1 tspDried fenugreek leaves (kasoori methi)
to tasteSalt
100 gms Yoghurt (dahi) (whisked)
2 tbspVegetable oil
400 gmsBasmati Rice (soaked for 30 minutes) (For Rice)
1 nos (5 cm)Cinnamon stick
4 nosGreen cardamom pods
4 nosCloves
1 nosBay leaf
1 pinchSaffron (soaked in 2 tbsp warm milk)
1 sprigMint leaves (chopped)
2 tbspGhee or oil

Description - Step 1

Step 1: Cook the chickpeas

  • Drain the soaked chickpeas and add them to a pressure cooker with 3 cups of water and 1/2 tsp salt. 

  • Pressure cook for 3-4 whistles until the chickpeas are soft but not mushy. Drain, reserving the cooking liquid.
