Chopped or grated vegetables like cucumber and carrot are added to the mix to give it an extra crunch. Pomegranate seeds are used as a garnish. You can also use herbs like mint or coriander. Both pomegranate seeds and herbs add a pop of colour to the dish. While it has both sweet and savoury versions, this dahi poha recipe focuses on the savoury version. The sweet version uses poha, curd, milk, and mixes it with jaggery powder (for the sweetness) and cardamom powder (for the aroma). How to make savoury dahi poha? Simply mix all the ingredients. However, always soak the poha before using — but not for long, or it will turn mushy. Some savoury versions use a ghee-based tempering of mustard seeds and chilli powder at the end, but you can skip it. You can also top the dish with store-bought chilli oil if you like a little extra heat. Or add a chopped green chilli into the mix. Step 1: Soak the poha

Place the poha in a sieve and rinse it lightly under running water for a few seconds. Let it sit for 3–5 minutes so it softens. Make sure it turns soft but not mushy. Fluff gently with your fingers.
