Step 1: Prepare The Dough
In a large bowl, combine Aashirvaad Shudh Chakki Atta, salt, sugar, and oil. Gradually add water and knead into a soft dough. Thanks to its 100% whole wheat composition and moisture-retaining quality, the dough becomes smooth and pliable. Cover and rest for 15 minutes.

Step 2: Make The Parottas
Divide the dough into equal portions. Roll each portion thin, apply a light layer of oil, fold into layers, and roll again to form parottas. Cook on a hot tawa until golden brown on both sides. Lightly crush them while warm to enhance flakiness. Allow to cool and shred into bite-sized pieces.

Step 3: Saute The Aromatics
Heat oil in a large pan. Add chopped onions and sauté until translucent. Add green chillies and ginger-garlic paste. Cook until fragrant. Stir in tomatoes and cook until soft and pulpy.

Add capsicum, turmeric powder, red chilli powder, garam masala, black pepper, and salt. Mix well and cook until the spices blend and the oil begins to release from the masala.

Add shredded whole-wheat parottas into the pan. Using a spatula, mix and lightly chop while tossing so the parotta absorbs the masala evenly. Cook for a few minutes until well combined.
