Kothu Parotta Scramble is a loved South Indian street food known for its bold spices, rhythmic chopping sound, and aroma. It is traditionally made with flaky parottas, shredded and tossed with masala. This homemade version uses wholesome whole-wheat parottas prepared with Aashirvaad Shudh Chakki Atta for added nutrition and softness. Recognised as the leading packaged atta brand in India since 2002, Aashirvaad Shudh Chakki Atta is prepared from selected whole-wheat grains sourced directly from farmers. It is ground using modern chakki technology with 0% maida and 100% whole wheat, following a four-stage process that helps retain quality and nutrition. The atta also helps maintain suitable moisture in the dough, resulting in soft and fluffy parottas that shred beautifully for this scramble. The result is a hearty, flavour-packed comfort dish perfect for lunch or dinner.
