Odia Dalma is a famous preparation from the state of Odisha made with split pigeon peas (toor dal) and seasonal vegetables. Here, the recipe does not use onion and garlic, and therefore the natural sweetness from vegetables and earthy flavour from lentils dominate the dish. The dish is strongly associated with Rath Yatra 2026 and Chappan Bhog, where the dish is made along with festive meals. Dalma is made with vegetables like pumpkin, green banana, yam, potato and carrot and seasoned with roasted cumin, ginger, and usual tempering with cumin seeds and dry red chillies. It is a nutritious and comforting food.
