Khapli wheat flour needs more babying than the everyday atta, especially during monsoons. Check your khapli atta every couple of weeks during monsoon rather than waiting for a bad roti and your taste buds to tip you off. Warning signs include clumping, a musty or sour smell, visible weevils, or a change in colour and texture. Caught early, mildly damp flour can often be saved: spread it thin on a clean cloth in direct sunlight for a few hours, turning it occasionally, then sift out any clumps or insects before storing it in a fresh, dry container. Monsoons can be a little mean to atta in general, so it needs a little care in an airtight container and kept away from strong sunlight and in a cool place.
