Khapli atta khakra, a crunchy, nutty snack
Khakra is a popular Gujarati snack traditionally made from whole-wheat flour, spices, and oil. It is pressed and dry-roasted on a griddle until brittle. It’s paper-thin, crispy, and often paired with pickles or chutneys for a simple tea-time snack. When made with Aashirvaad Chakki Khapli Atta, the khakra develops a more robust structure with a nutty, earthy flavour. Almost all varieties of wheat khakra can be adapted to khapli khakra. The trick to a crispy khakra is as much in the flour as it is in the thin rolling.
How to make khapli atta khakra?
Mix 2 cups Aashirvaad Chakki Khapli Atta with ½ tsp salt, 1 tsp oil, and enough water to form a firm dough. Add 2 tbsp of gram flour for crispier results. Cover and let it sit for 10 minutes. Now, roll into very thin rotis and cook lightly on a tawa from both sides. Press continuously with a cloth or spatula over low heat until the khakhra becomes crisp and golden. Let it cool completely before storing in an airtight container. This is the plain khapli khakra. Read ahead for more flavour varieties.
Methi Khapli Atta Khakra
One of the most popular khakhra varieties across Gujarat, methi khakhra combines the crisp texture of khakhra with the earthy aroma of fenugreek or methi. To make it, simply add crushed dried fenugreek leaves (kasuri methi) to your Aashirvaad Chakki Khapli Atta dough before rolling and roasting. The result is a flavourful snack that pairs particularly well with masala chai and makes an excellent travel-friendly snack. Be careful, though, before you realise, you’d have polished off a stack!
Jeera Khapli Atta Khakra
Mild, aromatic, and versatile, jeera khakhra made with khapli atta is perfect for those who prefer subtle flavours. Cumin seeds are mixed directly into the khapli dough before rolling. As the khakhra roasts, the cumin releases its aroma and creates a savoury snack that works equally well on its own or with dips and chutneys. The combination of khapli and jeera also makes this a more gut-friendly option to try. If you're introducing someone to khakhra for the first time, this is often a safe place to start.
Chilli Garlic Khapli Atta Khakra
For those who like their snacks with a bit of heat, chilli garlic khapli khakhra delivers exactly that. Red chilli flakes or chilli powder are combined with garlic paste or garlic powder and incorporated into the dough. The finished khakhra is spicy, savoury, and packed with flavour. Pair it with a cooling yoghurt dip if you want to balance the heat. This is also a good choice for an appetiser board where you want to balance different tastes and textures in one plate.
Cheese & Herbs Khapli Atta Khakra
If you're trying to get children interested in traditional snacks, a cheese and herbs khakhra can be a great gateway. Inspired by pizza flavours, this variation uses herbs such as oregano and mixed Italian seasoning, often paired with cheese powder or grated cheese. The result is a crunchy snack that feels familiar while still retaining the wholesome appeal of a homemade khakhra made with Aashirvaad Chakki Khapli Atta.
Peri Peri Khapli Atta Khakra
A relatively modern addition to the khakhra family, peri peri khakhra combines a traditional Gujarati snack with one of today's most popular seasoning blends. The peri peri spice mix adds heat, tanginess, and a touch of smokiness to the khapli dough. It's bold, vibrant, and particularly popular among younger snack lovers who enjoy fusion flavours. After all, if peri-peri can be on top of French Fries, then why should khakra not join the race?
Pani Puri Khapli Atta Khakra
It’s got crunch. It’s got that classic interplay of tangy and spice. And yet, it’s not a panipuri. But rather, a panipuri flavoured khakra that will definitely be a hit with street food lovers. Made with Aashirvaad Chakki Khapli Atta, the khakra typically includes ingredients such as dry mango powder, cumin, black salt, and chaat masala that replicate that zesty panipuri flavour. The result is surprisingly addictive with a lot less mess than what you get with panipuri!
The many shades of khapli atta khakra
One of the biggest challenges with khapli atta products is that people limit it to the most basic version, especially because the flour already brings a touch of nuttiness. However, sometimes, the simplest recipes are the most satisfying; they can also get a little monotonous. So keep experimenting with various ingredients and flavour combinations and explore the many shades of khapli atta in cooking.
