What is An Apple Pie Recipe? And Why Use Khapli Wheat Flour?
An apple pie is a fruit pie in which the star ingredient of the filling is apple. A saucy, spiced apple filling is enclosed in a flaky pie crust, creating a comforting English dessert popular in many countries, including the United States, Europe, Canada, Australia, and New Zealand. Using khapli wheat flour not only makes the crust more wholesome but also adds a subtle nutty flavour that complements the warm spices and the apples' natural sweetness.
Ingredients Needed
Here is the detailed list of ingredients, where the crust dovetails with the filling requirements.
For The Crust:
Aashirvaad Chakki Khapli Atta: 1 1/2 cups
Salt: 1/3 tsp
Salted Butter: 9 tbsp
Sugar: 1 tbsp
Ice-cold Water: 4 tbsp
For The Filling:
Peeled and Sliced Apples: 3 apples
Juiced Lemon: 1 tbsp
Sugar: 2 tsp
Brown Sugar: 2 tsp
Khapli Atta: 1 tbsp
Cinnamon Powder: 1/2 tsp
Salt: 1/3 tsp
For Brushing On Top:
Milk: 1 tbsp
Honey: 1.5 tsp
Sugar: 1.5 tsp
Make The Crust
In a large mixing bowl, combine khapli wheat flour, salt and sugar. Then, add the chilled butter to the flour with your fingers until the mixture resembles coarse sand. Sprinkle chilled ice water over the crumbly dough and, with your hands, push the dough from the sides toward the centre of the bowl to form a ball that holds together. Khapli flour needs extra water to hydrate properly, so add enough to bring the dough together. There should not be too much moisture in the dough; it should be firm. Divide it into 2 equal portions, cover in cling wrap and refrigerate for about 2 hours.
Prepare The Apple Filling
In a large bowl, add the sliced apples, lemon juice, brown sugar, white sugar, salt, cinnamon powder and khapli flour. Mix all the ingredients until the apples are well coated and combined. In this apple pie recipe, the filling is set aside for a while until the rest of the preparation is complete. So, for flawless preparation, lemon juice is used to prevent the apples from oxidising. Additionally, many classic recipes call for honey in place of the then-expensive sugar.
Work On The Pie Dough
Once the crust is chilled, you are ready to work on the pie dough. Generously flour the work surface using some khapli wheat flour. Place one portion of the chilled pie crust on the floured surface and, using the heels of your palms, press down to flatten it, then pull outward to stretch it. Now, using a rolling pin, roll out the dough into a large round, quarter-inch thick. Next, similarly roll the second pie crust and keep it aside.
Assemble The Pie
After rolling the dough, transfer the first layer to your pie pan. Unfold the khapli wheat pie dough and gently press it in so that it fills the inner edges and corners. Pour the apple mixture over the pie dough in the pie tin and spread it around evenly. Cover the filling with the second rolled dough. Now fold the overhangs over the edges to seal them together. Make sure to assemble gently, as this dough is made with khapli wheat flour, which does not require the vigorous handling of dough made with all-purpose flour.
Bake And Cool The Pie
Combine the honey and milk in a small bowl, then brush the top of the apple pie with the mixture. This gives the crust a nice colour. Using a sharp knife, cut small slits all over the lid to let steam escape while retaining just enough moisture for the apple pie. Bake the pie crust in the preheated oven until golden brown, about 40-45 minutes. After 45 minutes, a golden crust will be noticeable, indicating the pie is ready. Remove it from the pan and let it rest for ten minutes.
How To Serve Apple Pie Like A Pro?
While this apple pie recipe with a flaky crust filled with warm, fragrant, soft apples shines on its own, there are various ways to elevate its flavours and textures, creating a symphony of taste that will leave your taste buds dancing with delight. Cut the homemade apple pie into neat wedges, drizzle some icing sugar on top and serve warm with whipped cream and vanilla ice cream, taking the meal to another level of indulgence.
