Khoba roti is a Rajasthani flatbread renowned for its textured surface. The word khoba is Marwari for cavity, and the purpose of creating such impressions in the roti is to allow the flatbread to hold the ghee or subzi poured over it. This makes eating the roti fuss-free, as the roti itself serves as a plate for the accompaniments.
This recipe uses Aashirvaad Chakki Khapli Atta, which is stone-ground like a good old chakki of yesteryear. Apart from this, it contains 30 per cent more protein than regular wheat flour. Making this roti is no less than an art; even though it is made on a tawa, it is nothing like your standard roti. It needs to be cooked on a medium flame first; it may remain uncooked inside. It is supposed to have a crisp, tough exterior, softening only when it comes into close contact with ghee or the sabzi.
