A popular flatbread in Punjab, Aloo Kulcha is filled with spiced potatoes and fried till it puffs up and becomes golden. Even though it's traditionally cooked in clay tandoors, you can easily make it in your own pan. This dish will fill your soul when served with chole, butter, and curd raita.

1/2 tspBaking powder
1/4 tspBaking soda
1 tspSugar
1 tspSalt
2 tbspOil
as neededWater
(optional)Nigella seeds
2 largeBoiled potatoes, (peeled and mashed) For the Filling
1Green chilli, (finely chopped)
2 tbspCoriander leaves (chopped)
1/2 tspRed chilli powder
1/2 tspDry mango powder (amchur)
1/2 tspRoasted cumin powder
1/4 tspGaram masala
to tasteSalt
For CookingButter or ghee

Description - Step 1

Step 1: Make Dough

To get a soft dough, pour enough water into a big bowl and mix in the flour, yoghurt, baking soda, baking powder, sugar, salt, and oil. Allow to rest for a minimum of one hour after kneading for five to seven minutes.
