Iftar food doesn’t always need long prep and complicated cooking steps. Dishes like the baked harissa flatbread can make appetisers quick, customisable, and enjoyable for both the host and guests. This flatbread recipe uses the classic harissa sauce (a hot chilli pepper paste) as a base flavour, spread over a flatbread or pizza dough. It’s baked at a high heat until crispy. The toppings can be customized to include anything, from feta and roasted vegetables, to chicken and herbs. You can also boost the flavour of the harissa by mixing it with oil, yoghurt, or soft cheese. It also makes the sauce more spreadable. The customisation makes it an easy, yet innovative, addition to your list of iftar food. This recipe keeps it basic, with just harissa sauce as the spread, and a simple topping of feta, onions, and cherry tomatoes. It’s simple enough for novice cooks to follow but flavourful enough to serve at a party.
Place the store-bought flatbread or pizza base on a baking tray lined with parchment paper. Spread the harissa paste evenly across the surface. Drizzle olive oil over the top. Lastly, scatter the cherry tomatoes, sliced onion, and crumbled feta cheese evenly.
