Made with freshly ground spices, the speciality of Chettinad, Chicken Chettinad has been a beloved dish of South India for years. This meal has a spicy and aromatic flavour since it is marinated and cooked in a fragrant coconut sauce with a rich combination of traditional spices. Best enjoyed with steaming rice, paratha, dosa or idiyappam.
Make Chettinad masala by dry roasting red chillies, coriander, cumin, fennel, peppercorns, cardamom, cloves, cinnamon, and coconut in a pan until golden. Let it cool, then grind with water to make a thin paste.

Step 2: Prepare the Base
Lightly heat some oil in a kadai. Chop some onions and throw in along with some curry leaves. Now, add the ginger-garlic paste and sauté until golden brown and aromatic. Add tomatoes and stir for another minute.

Step 3: Add Masala
In the kadai, add the Chettinad masala paste, turmeric and red chilli powder. Keep stirring until the oil becomes visible.

Step 4: Cook with Chicken
Add the chicken pieces and season with salt. Add a cup of water, cover, and simmer over medium heat until the chicken reaches a soft consistency.

Adjust the curry's thickness to your taste by simmering it uncovered. Turn off the heat and serve with fresh coriander leaves and roasted red chillies.
