Chicken rezala recipe is a fragrant and delicate curry that originated in Bengal. It is a light dish where the chicken (traditionally, mutton is used) is marinated in a large amount of yoghurt and spices and slow-cooked. Food historians believe this dish evolved from rozila, a simpler Bengali preparation, likely refined by the royal cooks of Nawab Wajid Ali Shah after he settled in Kolkata in exile in 1856. Over time, this rezala recipe has undergone multiple transformations depending on where it was travelled. As in Bhopal, locals started adding a generous amount of coriander to adjust the flavour of their rezala recipe. Today, it is eaten as chicken rezala, which pairs best with piping hot parathas.
