Christmas can be the time to indulge in sweet delicacies and end every meal with a dessert. And while some desserts can be complex and time-consuming to prepare, others come together quickly enough to become a family favourite. Fruit custard is one such dessert. A milk-based dessert, it’s creamy and customisable (with respect to the fruit topping). Enjoy a bowl after lunch, or even sneak a bite before dinner — because calories don’t count over holidays.

Description - Step 1
Prepare the custard mixture
Add ¼ cup of milk (room temperature) to a bowl. Now, whisk the 3 tbsp of custard powder into it until a smooth, lump-free paste is formed.

Heat the milk
In a heavy-bottomed saucepan, add the remaining 3 cups of milk and the sugar. Heat over medium heat, stirring until the sugar is fully dissolved. Bring the milk to a gentle boil.

Thicken the custard
Slowly pour the custard powder mixture into the boiling milk while continuously whisking to prevent lumps. Keep stirring until the mixture thickens to a creamy consistency that coats the back of a spoon. This usually takes a few minutes.

Cool the custard
Remove the pan from the heat. To prevent a skin from forming, you can cover the custard with plastic wrap, pressing it directly onto the surface, or whisk it occasionally as it cools. Once cooled, transfer it to a serving bowl and chill in the refrigerator for at least 1-2 hours, or overnight for best results.

Chop fruits, assemble, and serve
Just before serving, wash and chop your choice of fruits into bite-sized pieces. Whisk the chilled custard until smooth and creamy. Gently fold in the chopped fruits and serve immediately while cold.
