Peel, wash, and cut the potato into even French fry strips. Soak them in water for 5 minutes to remove excess starch, then drain and pat them dry.

Coat with masala
Mix corn starch, dry mint, red chilli powder, black pepper, chaat masala, lemon juice, and salt. Sprinkle the mixture over the potato strips and toss until they are evenly coated.

Fry the masala fries
Heat oil in a pan on medium-high flame. Fry the potatoes in batches, turning occasionally, until golden and crisp. Drain on paper towels to get rid of the excess oil.
