Step 1: Prep the oven and spinach

Preheat the oven to 180°C and line a tray with baking paper. Place the spinach in a large bowl, sprinkle ½ tsp salt, and toss well. Let it sit for 10 minutes to release moisture. Transfer to a clean cloth and wring out thoroughly to remove excess water. Once dry, chop finely and set aside.
