Sabudana vadas, a cherished Indian snack from Maharashtra, are typically deep-fried and often savoured during fasting periods. This healthier version takes a modern twist by using an air fryer and incorporating flax seeds for an extra boost of fibre and omega-3s, giving it a nutritious upgrade without losing that satisfying crunch. It's ideal for those who want to enjoy delicious flavours while also being mindful of their health.

Directions

Description - Step 1

Prep sabudana

Rinse sabudana 2 to 3 times with water to remove excess starch. Transfer the rinsed sabudana to a large bowl and fully submerge them in water. Let them soak in the water for about 4 hours or overnight, depending on the sabudana pearls used. Check softness by pressing the pearls; it should flatten easily without a hard centre. After soaking, drain excess water completely to avoid sogginess.
