The Marathi dish kobi vadi is made from shredded cabbage, gram flour, and simple spices. The ingredients are formed into logs, and the mixture is steamed until it is solid. After cooling, the mixture is cut into bite-sized pieces. The preparation of cabbage and besan gives the vadi its unique texture, while other ingredients such as sesame seeds, peanuts, ginger, and green chillies contribute to its flavour. Many Marathi families prepare the dish in winter, when cabbage is plentiful. Kobi vadi is delicious and is generally served in the evening as a snack or on festive occasions. It is steamed instead of deep-fried to make it healthier and lighter. It goes perfectly with green chutney, tamarind chutney, or even tea.
