Mince the garlic cloves and stir them into a bowl of olive oil. Set it aside and let it sit for a few minutes to infuse. Also, cut the feta cheese into bite-sized cubes.

Marinate the feta
Place the feta cheese cubes in a large plate, serving dish, or clean, glass jar. Now, sprinkle herbs, chilli, lemon rind, and black pepper on top. Pour over the garlic-infused oil, ensuring the cheese is mostly covered.

Serving marinated feta
Serve the marinated cubes immediately, with toothpicks on the side. You can also serve the feta with crusty bread and olives. If you have time, cover and refrigerate for at least 4 hours or overnight for the best flavour. Bring to room temperature for 15–20 minutes before serving.
