Gujiya is a popular sweet dish, commonly served during the Holi festival in India. However, there’s no reason why this fried, crescent-shaped pastry, made from all-purpose flour and filled with mawa (a milk product) and nuts, can’t be a year-long treat. Frying lends a crispy edge to the sweet, while the filling is warm, crumbly, and rich.

For the Dough (Pastry):

For the Mawa Filling and Frying:
200 gMawa/khoya, crumbled
½ cupPowdered sugar
¼ cup Mixed chopped nuts (almonds, cashews, and pistachios)
In a bowl, add flour and salt. Then, rub in ghee till the mixture becomes crumbly. It should resemble breadcrumbs. Gradually add water and knead into a firm dough. Cover and let it rest for at least 30 minutes. Start prepping the filling in the meantime.

Prepare the filling
Dry roast the crumbled mawa in a pan on low heat until it turns golden. Let the mawa cool. Meanwhile, in the same pan, add a tbsp of ghee and sauté the chopped nuts until fragrant and cool. Add the cooled mawa to the mix, along with powdered sugar and cardamom powder. Mix it all.

Assemble the gujiyas
Take small portions of the dough balls and roll them into thin circles. Now, add the mixture to one half of the circle. Use water or milk to moisten the edges. Now, fold the circle into a semi-crescent shape and crimp the edges. It would take about 2-3 minutes per gujiya.

Fry the gujiyas
In a deep pan, heat some oil. Once the oil is hot, deep-fry the gujiyas at a low to medium heat until they turn golden brown and crisp. Remove the gujiya with a slotted spoon and drain them on paper towels.

Make the sugar syrup
While the gujiyas cool down, mix granulated sugar and water in a saucepan over medium-low heat. Stir continuously until the sugar completely dissolves and the liquid is clear. Avoid boiling the mixture; instead, simmer for 4–5 minutes until the syrup reaches a ½-string consistency.

Garnish with pistachios
Dip the gujiyas in sugar syrup before dusting with pistachios. Serve with fried snacks, masala chai, or as is.
