Samak rice kheer is an authentic Indian dessert that is generally made during fasting times like Hariyali Teej, Navratri, Ekadashi, and Shivratri. In this recipe, instead of using conventional rice, samak rice, or barnyard millet, is used; it is widely used during fasting as it is considered a fasting-friendly ingredient. When cooked on low heat using milk, samak rice becomes soft and almost similar to rice kheer; however, it has its unique taste and nutty flavour. To prepare this dish, roasted samak rice is cooked along with full-fat milk till the rice becomes creamy and thick on its own. The warmth of cardamom, the aroma and colour of saffron and the richness and texture of almonds, cashew nuts, dry fruits, and pistachios create a wonderful result of this dessert. Samak rice kheer is prepared so it can be served both warm right after the vrat meal or cold after putting it in the fridge as a dessert. This simple-to-make dish can also be prepared in advance and saved in the fridge until serving.
