The chicken is spatchcocked – a technique that involves removing the backbone and flattening the bird, which ensures faster cooking. Description - Step 1

Step 1: Roasting the peppers and onions

Preheat the oven to 180°C. Put the red peppers and red onion chunks on a baking tray. Drizzle with 2 tablespoons of oil, then sprinkle with paprika, smoked paprika, cayenne pepper, and 1 teaspoon of salt. Toss everything to coat evenly. Place in the oven and roast for 20 minutes until the vegetables are softened and slightly charred.
