Ragi Ambali is a traditional summer drink from Karnataka, where finger millet has long been part of daily meals. Farmers relied on this mildly fermented porridge for hydration during peak heat. The natural fermentation improves digestibility, while yoghurt adds beneficial bacteria. Served slightly chilled, ambali supports gut health, replenishes electrolytes and provides steady energy without heaviness. It remains relevant today as a practical, low-cost cooling drink during scorching months.
Place finger millet flour in a pan and gradually add 2 cups of water, stirring continuously to prevent lumps. Keep the flame low and cook for 4–5 minutes until the mixture thickens into a smooth paste. The texture should resemble soft porridge without a raw flour taste. Once cooked, transfer it to a plate and spread evenly to cool completely.

Ferment Overnight
Pour 3 cups of water into an earthen pot. Wet your fingers lightly and divide the cooled ragi mixture into equal portions. Roll them into balls and gently drop them into the water. Cover the pot and leave it undisturbed overnight or for 8–10 hours to allow natural fermentation to develop mild sourness.

Churn Mixture
After fermentation, discard any scum formed on the surface. Using a traditional wooden churner or whisk, churn the mixture thoroughly until the ragi balls dissolve completely into the water. The liquid should appear slightly frothy and uniform in consistency, without visible lumps.

Add Flavourings
Add yoghurt and salt to the fermented liquid and mix until well combined. Stir in finely chopped green chillies, ginger, onion and fresh coriander leaves. These additions provide a savoury depth and light crunch that balances the sour base. Adjust salt carefully to maintain a refreshing taste.

Pour the ambali into individual glasses. It can be served immediately at room temperature or lightly cooled. Stir before serving to ensure even distribution of spices and yoghurt. Consume the same day for the best flavour and freshness.
