Rose Falooda Ice Cream Sundae is closely associated with Ramadan evenings, when cooling desserts are served after iftar. Falooda traces its roots to Persian faloodeh and evolved in the Indian subcontinent into a layered milk-based treat with sev, sabja seeds, and rose syrup. The combination offers hydration, sweetness, and texture contrast: soft basil seeds, silky milk, slippery sev, and creamy ice cream, making it particularly suited to warm-weather fasting months.

Directions

Description - Step 1

Step 1: Soak Sabja

Place sabja seeds in ½ cup of water and allow them to rest undisturbed. Within minutes, each seed develops a translucent coating and swells noticeably. Once fully bloomed, strain away any extra water. The soaked seeds should feel soft and gelatinous, not crunchy at the centre. Keep them chilled until assembly.
