Samak rice khichdi, also known as vrat ki khichdi, is prepared during Hindu festive fasting days, especially during Navratri and Mahashivratri. It’s made with samak chawal (barnyard millet or samvat rice). This nutritious khichdi is light on the stomach yet filling and satisfying. Barnyard millet is naturally gluten-free, rich in fibre, and has a low glycemic index, making it an excellent choice for fasting foods. Unlike regular khichdi made with rice and lentils, this version uses only barnyard millet with potatoes, flavoured with cumin, ginger, green chillies, and black pepper. Adding ghee makes it rich and fragrant, while rock salt (sendha namak) keeps it suitable for religious fasting.

Step 1: Soak the barnyard millet

Rinse samak ke chawal (barnyard millet) thoroughly in water. Soak in fresh water for 1 hour. Drain completely and set aside.
