How To Make Crispy Panner Pakora

Ingredients

  • Cottage cheese-250 grams 
  • Gram flour- 1 cup 
  • Boondi- 1 cup 
  • Garlic cloves- 8-10 
  • Oil- 1 teaspoon 
  • Red chilli powder- 1 tablespoon 
  • Salt- to taste 

Method

Step 1

Cut the cottage cheese into batons measuring about 2 inches long and ½ inch thick. Carefully slit each baton halfway, keeping one edge intact, so you can stuff the filling later. Set aside.

Step 2

Take the boondi in a bowl and crush it lightly with your hand until it is coarse but not powdery. Keep it aside, as this will form a crunchy coating for the pakoras.

Step 3

Peel the garlic cloves and roast them in a teaspoon of oil until lightly golden. Mix with red chilli powder and salt, then grind it to a smooth paste. This spicy chutney will be used both in the batter and as stuffing.

Step 4

In a mixing bowl, combine gram flour, the garlic chutney, red chilli powder, turmeric powder, a pinch of soda bicarbonate, and salt. Gradually add water and whisk well until you have a smooth, coating-consistency batter.

Step 5

Allow the batter to rest for about 15 minutes. This step helps the flavours develop and gives the coating a better texture when it's fried.

Step 6

Fill the slit in each paneer baton with a little garlic chutney. Dip the stuffed paneer pieces into the gram flour batter, then roll them gently in crushed boondi to cover evenly.

Step 7

Heat enough oil in a kadai for deep-frying. Fry the coated paneer pieces in medium-hot oil until golden brown and crispy on the outside. Drain them on absorbent paper to remove excess oil.

Step 8

Serve the crispy paneer pakoras immediately with spicy green chutney or tamarind chutney. It is best enjoyed hot with a cup of masala chai.
