The key factors determining the success of emulsification are mechanical action and an emulsifying agent. Whipping, shaking, or mixing, the oil molecules to split into very tiny drops. The emulsifying agent is a compound with one part of the molecule attracted to water and another part attracted to oil, resulting in the covering of the wet droplet and preventing neighbouring droplets from merging. Egg yolk contains lecithin, one of the best-known natural emulsifiers, while mustard also contributes natural stabilising compounds. Smaller, more uniform droplets create smoother, thicker, and longer-lasting emulsions.

Emulsions are not created equal. An example of a temporary emulsion is vinaigrette, a blend of oil and vinegar that separates once the oil droplets begin to float away from one another. Similarly, sauces such as hollandaise and Caesar dressing rely on stable emulsification to maintain their respective characteristics.

The primary causes of emulsion failure include adding oil too quickly, insufficient whisking, an incorrect temperature, and an incorrect ratio of fluid to emulsifier. Warm ingredients can make some sauces difficult to control, while too much oil can overcome the emulsifier. Fortunately, many broken emulsions can be restored by gradually mixing them into a new egg yolk, mustard, or a bit of water. Good mixing technique and controlled addition remain the two best ways to avoid breaking an emulsion.

The use of room-temperature ingredients facilitates emulsification in many cases; therefore, make sure the required temperatures have been reached before doing anything else. You can use a whisk, a stick blender, or a food processor to break the mixtures into finer droplets.
