Banh Mi is a Vietnamese sandwich, found on streets, in restaurants, and even made at home. Similar to a sub, it’s made by splitting a baguette lengthwise and filling it with meat and savoury ingredients like pickled vegetables, freshly chopped herbs, and a sauce. The mix of protein, veggies, and condiments makes it heavy enough to be a main course, but it can also be served as a snack.

½ cupDaikon radish, matchstick-cut
½ cupRice vinegar
½ cupWater
¼ cupSugar
1 tspSalt, divide
250–300 gChicken breast (boneless, skinless)
1 tspGarlic, minced
1 tbspSoy sauce or fish sauce
¼ tspBlack pepper
to tasteSalt
3–4 tbspMayonnaise
½ cupCucumber, thinly sliced
6–8 slicesJalapeño / green chilli, thin slices
small handfulCilantro
1 sachetMaggi seasoning, optional

Step 1: Make the vinegar mix for pickling veggies

Add rice vinegar, sugar, salt, and water to a saucepan and bring to a boil over medium heat. Keep stirring until sugar has dissolved; can take about 1 minute. Allow the mixture to cool.
