It’s arguably one of the most loved street-style Indian appetisers that perfectly balances crispy and creamy textures to deliver unmistakable goodness. Here, crunchy papdi – small, fried discs made from a gram-flour dough — are topped with a medley of sauces and basic vegetables like onions, potatoes, and tomatoes. The whole thing is garnished with a crunchy sev or sweet pomegranate seeds, and flavoured with different spice powders. What makes this the ultimate Holi party snack is that it’s highly customisable. You can adjust the quantity of sauces, choose different garnishes, or skip altogether, and make it as spicy, tangy, or sweet as you like.

½ cupPotatoes, boiled and diced
½ cupOnion, finely chopped
½ cupTomatoes, finely chopped
3 tbspCoriander leaves, finely chopped
3–4 tbspTamarind chutney
3–4 tbspMint-coriander chutney
½ cupThick yoghurt, beaten (optional)
1 tspChaat masala
1 tspRoasted cumin powder
½ tspRed chilli powder
½ cupSev (optional, for garnish)
2-3 tbspPomegranate seeds (optional, for garnish)

Description - Step 1

Make the papdi dough

In a medium or large bowl, mix Aashirvaad Besan with rice flour, ajwain, red chilli powder, and salt. The rice flour adds crispiness, and the besan, made from the finest 100% Bikaneri chana dal, smooth and lump-free batter. Slowly add water to form a firm but smooth dough. Cover and rest for 5–10 minutes.
