Your Diwali is about to get a lot more delicious! Turn the aromatic Soan Papdi into a fusion dessert with a Soan Papdi Crumble Parfait. Imagine a royal dessert with layers of saffron mousse, rose jelly, pistachios, and, of course, the famous Soan Papdi crumble. Indulge in this decadent delight instead of rolling your eyes at yet another box of Soan Papdi.

Ingredients

8-10 cubesSoan Papdi
1 cupGreek yoghurt
10Saffron strands (soaked in 2 tbsp warm milk)
½ cupRose jelly
2 tbspHoney
½ tspCardamom powder
¼ tspVanilla essence (optional)
2 tbspChopped pistachios
1 tbspDried rose petals
optional Edible gold leaf

Description - Step 1

Step 1: Prepare Saffron Mousse

Combine Greek yoghurt, honey, cardamom powder, vanilla essence and saffron flavoured milk. Blend all ingredients together with a whisk and let them sit aside to cool for 10 minutes.

Step 2: Crumble Soan Papdi

Gently crush the soan papdi with your fingers or a spoon. Preserve texture by avoiding excessive crushing. 

 

Description - Step 3

Step 3: Layer the Parfait

Arrange crumpled Soan Papdi, saffron mousse and rose jelly in a transparent glass in that order. Top it off with dried rose petals and pistachios.

 

Description - Step 4

Step 4: Chill and Set

Sprinkle with edible golden leaf and mint leaves. Put it in the fridge for at least 20 to 25 minutes before you eat.
