Cookies are a classic dessert popular in America and European countries. Chai is arguably India’s unofficial drink. Bring the two together, and you have chai-spiced chocolate chip cookies. Sweet chocolate and chai spice come together in a gooey mix that oozes when the cookies are broken in two. Crispy on the outside and soft on the inside, this is one irresistible fusion dessert.

Description - Step 1
Make the base mix
In a mixing bowl, add the unsalted butter, brown sugar, and granulated sugar. Whisk it all together with an electric mixer for 3-5 minutes until the mixture turns pale in colour and the texture is light and fluffy.

Make the wet mixture
Crack open the egg into the bowl. Also, add the vanilla extract. Now, mix to combine. If needed, use a spatula and scrape down the bowl to ensure everything is properly mixed.

Add and mix the dry ingredients
Using a sieve, sift the flour, chai spice, baking soda, baking powder, and salt into the mixing bowl. Now, mix the dry and wet ingredients until the two combine. But don’t overmix. The mixture should be soft but not crumbly or runny.

Add the chocolate
Add half of the chopped chocolate chips into the cookie mixture. With a spatula, mix it well to ensure the chocolate chips are evenly dispersed across the mixture.

Shape the cookies
Use small scoops of the mixture and lay them, at a distance, on the baking sheet. Press the remaining chopped chocolate onto the top and sides of the cookies. Cover the cookie dough balls with a tea towel and refrigerate for an hour.

Arrange the cookies
Towards the end of the hour, preheat the oven to 180 °C or 350°F. Now, line the baking sheet with parchment paper and arrange the dough balls on the sheet. Leave enough space for the cookies to rise and spread. Cook in batches, if required.

Bake the cookies
Now, bake the cookies for 10-13 minutes or until they start to turn golden. If you want a crispier cookie, bake for another minute or two. Remove from the oven and allow the cookies to set for five minutes. Cookies will continue to cook slightly on the tray after removal. Serve them hot.
