Masoor Daler Khichuri is a delicious and soul-warming Bengali dish that uses short-grain rice and red lentils, seasoned with a masala of onions, ginger, garlic, tomatoes, and dry spices. The addition of mustard oil, whole spices and fried potatoes makes this dish very flavourful and earthy, and adding ghee just before serving gives it a nice softness. In addition, a touch of Sunrise Turmeric Powder enlivens its bright golden hue. Red lentils are easily available, quick-cooking lentils that become creamy when cooked, making this khichuri quicker to prepare than versions made with other dals. One of the earliest rice-and-lentil dishes in India is khichuri, and the name derives from the Sanskrit word khiccā. The preparation is an important part of the autumn festivals in Bengal and is made in homes as well as in community kitchens during the festival of Durga Puja. Anyone visiting a Kolkata Durga Puja pandal will find khichuri served as a warm, filling meal, often with fried vegetables, papad, and chutney.
