Description - Step 1

Step 1: Make Chocolate Barfi

Combine butter, milk, sugar, cardamom, and salt in a pan over low heat until the butter melts and the sugar dissolves. Stir in milk powder and saffron. Continue cooking until the mixture forms a dough that leaves the pan cleanly. Transfer onto baking paper, roll to 1cm thickness, cut into cubes, and freeze for at least 25 minutes.

Step 2: Brown Butter & Mix Sugars

Melt butter in a saucepan until nutty and lightly browned. Add milk to reach the original weight, then stir in white and brown sugar with vanilla until smooth. This process develops deep flavour and adds richness to the cookie dough.

Step 3: Prepare Cookie Dough

Add milk powder to the butter-sugar mixture and mix until combined. Chill the dough for 10 minutes. Then fold in plain flour, cornflour, salt, baking powder, and baking soda until just incorporated. This ensures a tender and soft cookie.

Step 4: Fold Barfi & Chocolate

Gently fold in frozen barfi cubes and chopped milk and dark chocolate. Handle the dough carefully to prevent barfi from melting and to maintain distinct chocolate pockets.

Step 5: Portion & Chill

Use a 5cm scoop to portion dough onto a lined baking tray. Chill the dough for at least 4 hours. This prevents spreading and keeps the cookies thick enough to sandwich barfi.

Step 6: Bake Cookies

Preheat oven to 150°C fan / 170°C conventional. Bake the cookies for 17-18 minutes until the edges turn golden brown but the centres are still soft. Remove from oven and cool completely on a tray.

Step 7: Assemble Sandwich

Take two cooled cookies and sandwich a cube of frozen chocolate barfi between them. Press gently to secure without squishing the barfi. Repeat for the remaining cookies to form neat, uniform sandwiches.
