Chocolate barfi sandwich cookies bring together the nutty sweetness of traditional Indian barfi with soft, chewy chocolate cookies. The barfi’s milk, saffron, and cardamom create an aromatic filling, while the brown butter cookie dough with dark and milk chocolate adds depth and richness. 160gFull-fat milk powder
pinchCrushed saffron
150gUnsalted butter (For the Cookie Dough)
75gWhite caster sugar
75gDark brown sugar
2 tspVanilla bean paste/extract
75g Whole milk
30gFull-fat milk powder
190gPlain flour
25gCornflour
1 tspSalt
1/2 tspBaking powder
1/4 tspBaking soda
125gMilk chocolate, chopped
50gDark chocolate, chopped

Description - Step 1

Step 1: Make Chocolate Barfi

Combine butter, milk, sugar, cardamom, and salt in a pan over low heat until the butter melts and the sugar dissolves. Stir in milk powder and saffron. Continue cooking until the mixture forms a dough that leaves the pan cleanly. Transfer onto baking paper, roll to 1cm thickness, cut into cubes, and freeze for at least 25 minutes.
