Doon Chetin is a Kashmiri condiment; one spoonful can make you taste the cool mountains. In this Doon Chetin recipe, "Doon" denotes walnut and "Chetin" means chutney in Kashmiri. When blended properly, it creates a flavourful bomb that is earthy, creamy, tangy and utterly unforgettable. Traditionally, Kashmiris prepare this walnut chutney in a stone mortar and pestle, giving it a slightly coarse texture. It uses simple ingredients with bold flavours and tastes absolutely amazing: rich yet light and exquisite, with chillies and mint adding a zing, walnuts contributing nuttiness, and curd adding the faintest sourness.
