The Deconstructed Mango Salsa Sev Puri is a refreshing, tropical reinvention of Mumbai’s beloved chaat. It combines the classic sweet–spicy balance of sev puri with a bright mango salsa that bursts with citrusy flavour. Perfect for summer gatherings, this dish retains the crunch of the puri while adding a fruity, international twist. The contrast of textures, crispy puri, juicy mango, and silky chutneys, makes it a crowd-pleaser that’s as visually appealing as it is delicious.
Finely chop mango, onion, red bell pepper, and green chilli. Place them in a mixing bowl. Add chopped coriander, lemon juice, chaat masala, and salt. Toss gently until evenly coated. Refrigerate for 10 minutes while preparing other elements for a fresh, chilled salsa.

Step 2: Toast or Prepare the Puris
Lightly toast the puris or papdi on a baking tray at 160°C for 2–3 minutes until just crisp. This helps maintain their crunch when topped later. Alternatively, use freshly fried puris if available.

Step 3: Layer the Chutneys
Spread tamarind chutney and green chutney over each puri using a small spoon. The tamarind adds sweetness while the green chutney provides a spicy punch, the flavour base for your deconstructed bite.

Spoon a small amount of chilled mango salsa onto each puri. Make sure to include a bit of each element, mango, onion, and bell pepper, for a balanced bite.
