Prepare the Macaron Batter

Sift almond flour and powdered sugar together to remove lumps and achieve a fine texture. Add desiccated coconut and lime zest for a subtle aroma. In another bowl, whisk egg whites until foamy, then gradually add granulated sugar. Beat until stiff peaks form. Gently fold in the dry mixture and tint the batter light green. The right consistency should slowly flow off the spatula like lava.
