Step 1: Prepare Hot Chocolate Mix
Sift icing sugar, cocoa powder, milk powder, cornflour, cinnamon, nutmeg, and salt together in a large bowl. Whisk to blend the dry ingredients evenly. Finely grate the cold dark and milk chocolate, add it to the sifted mix, and whisk until you have a uniform spiced chocolate powder.

Step 2: Temper Chocolate Shell
Melt two-thirds of your dark chocolate in a heatproof bowl over simmering water (bain-marie) until it reaches 45°C. Remove from heat and add remaining chocolate, stirring until smooth and shiny. This tempering process ensures the chocolate sets with a glossy, crisp shell.

Step 3: Form Chocolate Bombs
Brush a thin layer of tempered chocolate inside silicone half-sphere moulds. Chill to set, then apply a second layer for sturdiness. Remove chocolate shells carefully once firm.

Spoon the prepared spiced hot chocolate mix into half of the shells and add mini marshmallows as desired.
