Dried Chickpeas
1 cup
Sweet potato, cooked and mashed
1 medium
Chickpeas, drained and rinsed
1 cup
Onion, finely chopped
½ cup
Garlic cloves, quartered
2
Flat-leaf Parsley, chopped
¼ cup
Cilantro, chopped
¼ cup
Ground Coriander
1 tbsp
Kosher Salt
1 tbsp
Ground Cumin
1/2 tsp
Cayenne
¼ tsp
Ground Black Pepper
¼ tsp
Millet, cooked at room temperature
1 cup
Oil
for frying

Directions

Prepare the Mixture

Take a food processor and add the following: chickpeas, sweet potatoes, onion, garlic, parsley, cilantro, coriander, salt, cumin, cayenne, and black pepper. Alternate between blending and pulsing, so that it mixes properly. Stop blending to scrape down the sides of the bowl. Ensure that all ingredients of the falafel mixture are uniform in size, but slightly grainy in texture. Add to a mixing bowl and add the cooked millet.

Shape the Falafel

Take a small amount of falafel mixture in your hands and roll into a walnut-sized ball. The mixture should hold together properly, and not fall apart.

Fry the Falafel

Take a high-sided skillet or pan that has about 3 inches of depth, so that the falafel is covered. Add the oil and heat. Once the oil is ready, add a falafel ball to test- the oil should bubble up and sizzle around it. The falafel should also stay in shape and not fall apart. Fry for about 2-3 minutes, till the falafel is golden brown in color
