Build the gravy base

Heat oil in a pan and add cumin seeds. Once they splutter, add ginger, garlic, and Kashmiri red chilli powder. Sauté briefly, then add sliced onions, black cardamom, bay leaf, and cashews. Cook until the onions soften and turn a light golden colour.
