Khapli wheat and curd parathas are a nutritious and delicious variation of the typical wheat paratha. These are made with the ancient grain Khapli wheat (also known as Emmer wheat or Samba wheat) using premium Aashirvaad Namma Chakki 100% Khapli Atta. This wholesome recipe combines the health benefits of low-glycemic Khapli wheat with the probiotic goodness of fresh curd to create soft, flaky parathas that are perfect for those mindful of their health and blood sugar levels. Adding curd to the dough not only makes the parathas incredibly soft and tender but also adds a subtle tangy flavour, making them ideal for packed lunches or meal prep.

Description - Step 1

Prepare the spiced curd mixture

Add 1 cup of fresh, thick curd (room temperature) to a large mixing bowl. Whisk it until smooth and lump-free. If using refrigerated curd, let it sit out for 15-20 minutes before starting. To the whisked curd, add salt, cumin seeds, coriander powder, red chilli powder, turmeric powder, finely chopped fresh coriander leaves, finely chopped green chillies, and ajwain seeds. Let this spiced curd mixture sit for 2-3 minutes.
