Ulta Tawa Ka Paratha is a popular and easy-to-spot flatbread in the "Nawabon Ka Shahar," Lucknow. The word ulta tawa literally means "inverted griddle," which describes how the paratha is cooked, giving it a slight curve. This recipe uses Aashirvaad Chakki Khapli Atta, which is richer in fibre and protein than regular wheat flour. Its higher fibre content contributes to better blood sugar control by slowing down the absorption of glucose. Unlike the Mughlai paratha from Bengal, Ulte Tawa Ka Paratha is delicately sweet and is representative of the Awadhi cuisine of Lucknow.
