Bibimguksu is one of those dishes that makes more sense the hotter it gets outside, cold wheat noodles tossed through a sauce built almost entirely on contrast: the slow heat of gochujang against the sharpness of vinegar, a little sugar to round it off, sesame oil for weight. This version leans on Yippee noodles for the base, chosen for a strand that stays long and separate rather than clumping once it hits the sauce, which matters more than it sounds like it should in a dish with no broth to loosen things up. The noodles are boiled just short of soft, then shocked in ice water, a step that firms them back up and is largely responsible for the dish's bite. Cucumber, sliced thin, and a soft-boiled egg go on top less for decoration than for balance, cutting the richness of the sauce with something cool and something creamy. A last scatter of ice cubes in the bowl is not a garnish so much as a functional decision, keeping the noodles cold through however long it takes to eat them.
