Make Independence Day special with this tricolour panna cotta that takes the Italian milk pudding and gives it a patriotic makeover. Panna cotta is made with milk, fresh cream, sugar and vanilla, and is layered with three distinct colours: a green-tinted panna cotta, a white middle layer and an orange-tinted panna cotta layer. You can garnish this tri-colour panna cotta with chopped nuts or chocolate rolls and shavings. Tricolour food surges during Independence Day in India as an ode to the nation’s flag, and panna cotta, an Italian dessert, finds its place because it's easy to adapt to local tastes and flavours. India, after all, loves their dairy and sweets and pudding; jiggly ones have been a thing for a long time now. Plus, panna cotta has a milk and milky flavour and can be dyed in different hues with added natural flavour to boost its appeal. This dessert is particularly suited to Independence Day celebrations, where its three distinct layers create the colours of the Indian tricolour flag.
