Bite-sized chicken pieces are cooked in a spiced gravy of onions and tomato and served with rice for a meal that marries comfort with flavor. When meal prepping, you can prepare just the curry or curry and rice and store in sectioned containers for upto five days in the fridge.
Heat ghee or oil in a skillet or pan on medium heat. Add the onions. Saute till they turn slightly brown before adding the ginger, garlic, bay leaf, sugar, and all the spice powders. Stir for roughly two minutes, till the spices turn aromatic.

Let the curry cool completely and store in an airtight glass or steel container. Plastic can stain and hold odor. You can store this curry for upto 5 days in the refrigerator.

Reheating the chicken curry
Reheat on medium flame. If the curry is too thick, add a splash of water to loosen the consistency. Avoid boiling. Serve the reheated curry with rice or roti.
