With this meal prep sprouts salad recipe, you can have a healthy, crunchy, and delicious side ready in just 15 minutes. And, it keeps fresh for up to four days. You can extend the time by a day or two by skipping onions from the mix or adding them right at the end, when serving.

1Carrot (grated)
2 tbspLemon juice

Description - Step 1

Step 1: Boil the sprouts

If using store-bought sprouts, first rinse them under water. Then, in a pot, add water and a pinch of salt. Bring the water to a boil before adding the sprouts. Cover the pot and let the sprouts simmer and cook for 8-10 minutes. They should be tender but not mushy. Once cooked, turn off the heat, drain the water, and let the sprouts cool.
